These knobby tubers are a hidden gem in the world of root vegetables, offering a delicate flavor profile reminiscent of artichokes with a hint of nuttiness. If you're tired of the same old side dishes, sun chokes are here to shake things up.

With their crisp texture and earthy sweetness, sun chokes are a versatile ingredient that can be enjoyed in a variety of dishes. Whether roasted to perfection, pureed into a creamy soup, or thinly sliced and tossed into salads, these humble tubers are sure to impress even the most discerning palates.
