No Fail Hollandaise Sauce

Struggling with Hollandaise sauce? Or feeling hesitant to give it a shot? With all this beef around and the chickens laying eggs again, this old Ma has been tinkering in the kitchen. And let me tell you, I've come up with a great way to whip up a Hollandaise sauce that's sure to leave your family begging for more.

Now, let's be real here, making Hollandaise sauce can be a bit intimidating. It's one of those things that can often go wrong – it curdles, it breaks, it just refuses to cooperate. But fear not, my friends, this recipe is pretty foolproof. 

The two things you will need to know -cold pan, and stir until you feel like your arm migh0t fall off! Creamy, velvety Hollandaise sauce drizzled over a perfectly cooked steak, or anything else you can imagine- it's delightful, and with this recipe I'm hand you're going to be your family's mealtime hero! 

Roll up your sleeves, dust off that saucepan, and get cooking! 


No Fail Hollandaise Sauce Recipe:

Ingredients:
- 4 egg yolks
- 1 stick of butter
- 2 tablespoons water
- 1 tablespoon lemon juice
- Pinch of cayenne pepper
- Salt to taste

Instructions:
1. In a cold saucepan, combine the egg yolks, water, and lemon juice.

2. Cut the butter into teeny tiny small pieces (Or better yet, shred it!) and add them to the cold saucepan and pour the egg mixture over top. 

3. Place the saucepan on the burner, turn the heat on medium low and just start to stir, stir, stir (yes, this means constantly) until the butter is melted and the sauce thickens. It will take about 4-7 minutes. DO NOT OVER COOK! 

4. Once the sauce begins to thicken, remove it from the heat and season with cayenne and salt to taste if needed 

5. Serve immediately over your favorite dishes and enjoy!

Problems? 

If your sauce still manages to break and curdles it's likely it got too hot. Not to fear, you can fix it!

The fix:
Use one whole egg and add to the broken sauce, stir vigorously over medium low heat until the sauce comes back together.
